Meatless Monday : A Crock Pot Dessert

Usually, I try to steer cheer of these dishes. I am actually pretty boring when it comes to dessert. I am perfectly happy with plain vanilla ice cream as long as it is Haagen Dazs occasionally I will indulge in some apple crisp with it if it was nana/mom’s recipe. If I am feeling super crazy maybe some key lime pie but that is rare. I can even remember the last time I had that. For the most part,  I just don’t have a sweet tooth. I am more of a salty person really. Either that or I am too busy stuffing my face with all the cheese to notice anything else.
I ran across this recipe on one of my favourite sites while looking for crack pot recipes. The obsession is real folks. I thought it was odd to make dessert in the pot but curious about it I was. I decided to make it for Easter dinner with the family. That way I wouldn’t have a crock pot full of calories taunting me till I personally licked the thing clean.
I wanted it to be fresh when we were ready to eat it so I packed up all the things and made it at my brother’s house in the afternoon. It was pretty easy to make. Mine turned out a little more done that I would of liked since I was having some wine and such and forgot about it for about 15 minutes too many. It was delicious nonetheless. Everyone loved it, the tall and the small, just the same.
I am going to stop rambling and just give you the recipe now…
Triple Chocolate Peanut Butter Pudding Cake

Ingredients
 
Non-stick cooking spray I never use the stuff so I greased it with a little coconut oil.
1/3 cup of sugar & 3/4 cup sugar
1 cup flour
2 tbsp of unsweetened cocoa powder x 2
1.5 tsp baking powder
1/2 cup of chocolate milk or regular milk.  Duh, chocolate.
2 tbsp vegetable oil – Again, I used coconut oil.
2 tsp vanilla
1/2 cup peanut butter flavour pieces
1/2 cup semi-sweet chocolate pieces
1/2 cup chopped peanuts
1/2 cup boiling water
Vanilla ice cream and chocolate pieces optional. I am also going to put it out there that the peanuts are optional too. Although, it was delicious it may be just as good possibly even better without them.
Directions
Pour a glass of wine. I chose Apothic Red. Take a sip, It changed my life.
Lightly coat the inside of your crock pot with the spray or your choice of oil.
Then I pulled out the Kitchen Aid stand mixer because that thing is my hero. You can use whatever stand mixer you have are loving.  Are there really any other ones? Or a medium bowl will do the trick too. Stir together flour, 1/3 cup of sugar and 2 tbsp of cocoa powder and the baking powder.
Take a sip or two of wine.
Add chocolate milk, oil and vanilla. Stir until just moist.
Sip, Sip.
Add peanut butter, chocolate pieces and peanuts if you really want them to dry mixture.  You should probably actually measure out a half cup of the peanut butter chips and not just dump the whole bag into the mixture. Then try to scoop out the excess when you realize it is way too much.  If you don’t it still turns out ok. I’m just sayin.
Spread the batter evenly in the crock pot.
Insert sips here.
The original recipe wants us to get another medium bowl but I just wasn’t down with that.  I washed out the KA bowl and started fresh with my mixer.  Combine 3/4 of a cup of sugar and the other 2 tbsp of cocoa powder.  Then gradually stir in boiling water.
It has been a while since we had a sip.  Yes? Yes.
Carefully pour cocoa mixture over batter in the crock pot.
Cover and cook on high heat for 2 to 2.5 hours. Maybe not 2.75 ok? You will know it is done if you do the clean toothpick test.
But this could be tricky because you are now going to refill your wine and get distracted with family time.
When it is done cooking you let stand for 30-40 minutes to cool a bit.  It says you could if you were inclined to take the liner out of the crock pot but I didn’t do that.
Ready to serve? Top with ice cream and chocolate pieces if desired.  The chocolate pieces are fun and look great but also optional.  The ice cream on the other hand, I am going to have to change to mandatory.  This cake is rich and you need it.  They pair perfectly together.  Enjoy.
