sometimes we slush instead of wine

I firmly believe Wednesdays are for wine.  I mean they just go together sort of like peanut butter and celery cause I don’t like jam.  Unfortunately, I don’t have a wine story for today.  I know, you are disappointed.  And by you, I am probably just talking to my Twinsie but I feel bad nonetheless since she is drinking her wine vicariously through me these days.

It has been hot, hot, hot around here.  In the absence of wine, there will still be booze, the ice cold, slushy kind actually.  On Saturday night, Scott decided it was going to be Mexican night.  He made the most delicious albeit slightly messy quesadillas.  What goes better what that on a hot summer night.  Margaritas. Oh, and daiquiris.  Sweet, sweet daiquiris.

He made the margaritas first and they were deemed good.  Then he decided to try something different with the daiquiris.   Wow.  I could drink those all the day long.  EVERY. DAMN. DAY.  I thought I would share the drink recipe with you in case you are inclined to like a cold drink on a hot day.  Yes? I thought so.

Of course, I didn’t realize this was going to be a blog worthy event until after I had already imbibed in the first of said daiquiris.  Which was after a couple of margs.  So pardon the pics they are not my best work and the drinks are a bit more melty as it was the second part of the batch.  Awesome, just the same though.

Scotty Mac’s Daiquiri

You will need :

  • about a cup of frozen strawberries, pineapple and raspberries of each (we buy a ton of fresh fruit and freeze it for making smoothies and such)
  • 3 cups of ice
  • 6 ounces of simple syrup (you can buy this or make your own – it is just equal parts sugar and water)
  • 5 ounces of Captain Morgans Spiced Rum
Instructions : 

This is a K.I.S.S. recipe.  Put all those ingredients into your blender and blend till it is your desired consistency.  Add more fruit to make it thicker.  Add rum to make it thinner.  Or water if you are a pansy.  For more Saturday night shenanigans, drink shots of rum while gathering ingredients or speed shoot while blender is running.  This is really help with the karaoke show you will be performing later.  Oh, that was just me?
