confessions of a crock pot addict

Ok, fine… I will admit it.  I may have a problem.  I am totally obsessed with my Crock Pot.  I can’t stop using it.  I started off just using on Sundays.  It was totally cool then.  You know, who doesn’t want to pass away a chilly, winter Sunday puttering around the house, Netflixing or engrossed in their favourite book while their slow cooker does all the heavy lifting for fabulous Sunday night dinner.  Then I thought it would be no big deal to throw something together on a week day morning so I could come home to that fabulous aroma that always seems to emanate throughout the house the thing is on.  All the cool moms are doing it.  Why not me too? I can handle it.  Then I found myself on Saturday looking for yet another fix recipe on the net.  Apparently, I just couldn’t make it one more day to #SlowCookerSunday.  Let me tell you, it was fabulous that meal but it didn’t stop me from needing to start all over again on Sunday.

It is getting so bad that I had to go to Walmart and get more Rubbermaid containers to store all that slow cooked crack I have been making up.  I was thanking my lucky stars that there was a sale because I plunked two more of those boxes into my cart. Confession number B – I have a bit of a Rubbermaid problem.  Although, I believe I came by it honestly.  My mom used to sell Tupperware on the side when we where kids and we had all the tupper in all the lands.  This is much cheaper and easier to get my hands on.  Also, less painful when you take a dish somewhere and naturally never see it again.  Oh, but if I could.

In order to make it seem less like I just can’t control myself in the kitchen anymore.  I am going to pretend that I am a domestic goddess in training.  Even though, almost every fibre of my being hates the idea.  Not because I don’t enjoy doing it but because the amount that I enjoy it scares me.  I am starting to get excited over kitchen appliances.  We got that Kitchen Aid stand mixer for Christmas and now I need all the attachments.  I am constantly looking up recipes, cleaning with a smile on my face, drinking tea in the evening.  Granted the tea is somewhat temporary while on this whole 30 since I can’t wine at night.  It all makes me feel a bit grown up.  Like I am supposed to be an adult or something.  I think I am going to have to start watching more Disney movies while I do all these big girl activities.

I thought I would share the recipe with you all since you seemed to really like the last one I shared.  Plus, I have had a few requests to share more of my vegetarian fare so I was thinking about making a thing of it.  More blogging motivation must be a good thing.  Since I am not very good at recapping the weekend on Mondays I thought I would good meatless unless.  How about Meatless Monday? Sounds delicious to me.  I may even throw in some recipes I make for Scott since he supports my veggie lifestyle whole heartedly but still is a meat eater in his heart for those of you I know have thing for beef , etc.  Maybe I’ll even have the chef himself do a guest post along the way.  He is a way better cook then me for sure. So that could be a treat.

Since Claire and Jaime are waiting for me back at Castle Leoch it is getting late, I am going to leave my recipe with you in a different way.  No time for typing so you can have it straight from the source today, recipe book.
