Carb and Cheese Heaven

Happy Family Day to all my fellow B.C’ers out there.  Got to love a holiday weekend.  Especially one that starts off like this one did.  I got off work a little earlier than I normally do.  Yay for that.  I was wasting time trolling twitter and trying to decide what to feed us for dinner.  I was kind of craving a pizza and wine night.  I had no intentions of ordering in.   We didn’t have any ready made ones in the freezer because I’m trying to eat healthy and well that stuff is just so good for you.  So as far as I was concerned it was just not the night for it.

Then I saw Kay’s tweet…

I REALLY want to make homemade pizza with homemade pizza dough and some homemade pesto tonight, but I also want to eat before 10pm… 🍕

All of sudden my slight craving went into full on need it now mode.   Homemade pizza from scratch sounded fabulous.  Almost healthy in comparison to that crack that they deliver to you.  I totally needed to make it.  Never mind the fact that I have never made pizza dough in my life.  I decided if I could make Nana’s buns I could definitely try to make some pizza dough.  Besides that handy new Kitchen Aid stand mixer was going to do all the hard work for me.  
I had it almost the dough almost ready and was rolling it out when Scott got home.  I got him to throw the pizza because frankly that is a skill I just don’t have.  I tried to snap a pic of him doing it but alas my phone camera was not up to the task.  I do get a kick from the outtakes.  I am pretending he is throwing it like a super hero.  So fast you can’t even see it.  
I had actually thought about doing a healthier crust with coconut flour but realized that we had run out.  I decided to just make a regular crust anyway.  A little carb and cheese coma isn’t going to hurt me any once in while.  Since Scott wasn’t home to ask about the dough recipe I asked Mr. Google and he led me to this recipe from Mel’s Kitchen Cafe.  The dough turned out awesome and I would totally recommend trying it out if you are into this kind of thing.  
I topped it all of with a sun-dried tomato pesto sauce, diced tomatoes, green onions and peppers, feta and a bit of cheddar just for a bit more of a melted top.  It totally hit the spot and satisfied my carb craving. 
It also lead to the purchase of this pizza stone because I can see more those baby’s our the future.
